One phrase that you will hear me constantly prattle on about is “nutrient dense” and I apply this to making bone broth. I prefer a concentrated chicken bone broth which I make from a free range chicken and you will see there is very little left after I have finished preparing it. Alternatively, if you are feeling creative, you can add vegetables to the first cooking and have what is essentially a chicken broth.
I cooked my chicken using a slow cooker; notice that I place the chicken upside down. Next, add enough water to the base of the slow cooker to about 1cm depth. The meat on the top of the chicken is usually the driest, so by placing the chicken this way, the meat remains moist. Set the slow cooker on low and cook for at least 7 hours. (pics 1-3)
In the next pictures 4-6 you can see that the chicken is beautifully cooked; now take most of the meat off, setting it aside to use for meals later. The carcass and stock are left behind in the slow cooker. Now, add about 1 litre of water, enough to make sure that the carcass is covered, and put the cooker on for another 12 hours. (pics 4 – 6)
The next stage is not for the squeamish … work through the broth removing the skin and bones. The smaller bones you will notice are soft and if you press them they will disintegrate; this is a valuable source of calcium and collagen so I put it back into the broth. For the larger bones I take off the knuckle ends and pick out the marrow, also putting this back into the broth.

This takes about 15 minutes to do but it is really worth it. I do remove the skin and gristle, this is the only part of the whole chicken that is not used. Next, liquidise to a smooth creamy liquid; pour the broth into silicon muffin cases and finally place them in the freezer. The fluffy top is made up of the fatty particles … this is all good!! And please note, the broth is concentrated.
There are two ways to use these frozen blocks, first method uses microwave. Place a bone broth block in the bottom of a mug; top up with boiling water and place in the microwave for 1 -2 minutes until thoroughly heated. Alternatively, place the block in a small saucepan with half a mug of boiled water and reheat, thoroughly. Pour back into your mug and top up with more boiled water if needed.
I read how some people just can't get their broth to taste nice and honestly, I just add 1/2 a pinch of Himalayan sea salt to the mug and it tastes great every time so go ahead and enjoy at least one bone broth drink daily!
